Sheet Pan Sausage and Veggies

Beef sausage and a mix of veggies all coated in a flavorful seasoning and baked together on a single sheet pan for a quick and easy dinner! WW Points per Serving, which can easily be lowered by substituting the beef sausage for chicken or turkey.

Prepping the Sausage and Veggies

To start things off I chopped up all the veggies, except for the cherry tomatoes and placed them in a large bowl for mixing. You can use whatever veggies you'd like. I used zucchini, yellow squash, green beans, asparagus, and cherry tomatoes.

I then took my loop beef sausage and sliced small pieces off the loop until the entire thing was chopped. I then added it to the bowl with all the veggies. I then sprayed the veggies and sausage in the bowl with non-stick spray. I added in the seasonings and then gave the veggies and sausage and good stir, until everything is evenly coated.

One Pan Cooking

I prepared the sheet pan with a layer of foil, and sprayed it down with non-stick spray. I then dumped the bowl of seasoned Sausage and veggies onto the pan and spread them out evenly.

I then put the pan in the oven and cooked it for 35 minutes until the veggies were soft and the sausage heated through.

I divided the pan evenly onto 4 plates and served it up! Very easy and so extremely yummy! The house smells so good and the food tastes even better. I didn't want to sub the beef sausage for chicken or turkey because even though the points are lower, the flavor isn't as genuine. As long as you pair this meal with other lower point meals the rest of the day 11 points here is totally worth it.
