The wonderful mix of basil pesto, zoodles, and chicken. A perfect meal for a weeknight after work that the kids will enjoy, and maybe even not realize they are eating a full bowl of vegetables! The recipe has very little prep and is all cooked in one skillet for easy clean up.

Spirilizers Rock
Zoodles become one of my absolute favorite things to make. I have always been a pasta lover, and cutting back on the mac n cheese, spaghetti, and fettuccine alfredo was difficult for me. A common dinner I used to eat was butter noodles with Parmesan cheese on top. Zoodles helped get me through missing those foods.
I go back and forth between cooking meals for just myself and cooking for a family of four. I have a small handheld zoodler that was something like $10-$15. It is perfect for just myself. When i make zoodles for the family its quite the arm workout, so if you plan to make them often or for several people at a time I would suggest going for a counter based spiralizer.
Oodles and Oodles of Zoodles
This particular meal I had made for my little sister and I. As we discussed how many zucchini to use we both said we typically use one per meal when cooking for ourselves, so naturally we agreed that 3 would be the correct number for the two of us. One of us went to town on the spiralizer while the other cut up some chicken into cubes and cooked it on the stovetop until cooked through.
Once the chicken was done, I set it aside and cooked up some cherry tomatoes and mushrooms. When those were about done, I added the zoodles to the skillet and cooked those until they were al dente. Now this was long before I knew what I was doing, so some store bought pesto sauce was perfect. Those of you who are ambitious could make your own pesto, however for a quick easy weeknight meal, store bought is still tasty.
I added the chicken back into the skillet and dumped the pesto over top and stirred. This made two very hearty sized bowls of pesto zoodles. I could have easily been 3 or even 4 smaller portioned meals, but hey, we were hungry. To top it off we threw some shaved Parmesan on top and stuffed our faces.
