Making the Cherry Chutney

I grabbed my medium sauce pan and strayed the bottom really really well with non-stick spray. I then added in the chopped onion and the fresh rosemary and cooked those together, until the onion was soft. I then added in 4 cups of frozen cherries to the sauce pan and cooked them over high heat until they began to soften up a bit

Next, I added in the red wine and honey and turned the heat to medium. I added a touch of salt and pepper here too to help bring out the savory flavors. Here I then boiled the cherries down until almost all the liquid has evaporated and the cherries open. The cherries should be opened and the sauce should be thick, almost like a syrup when you are all done

Grilling the Chops

While the sauce is cooking down, I seasoned the pork chops with just salt and pepper and grilled them up for 25 minutes until my meat thermometer was at the 150 degrees

Finishing Touches

Once the pork chops were cooked, I topped each pork chop with 1/4th the cherry chutney and Served it Up!

Serve with your favorite veggie and ENJOY!
