Prepping Things Up
To get started, I took a small bowl and added in the Greek yogurt, seasonings and cheeses. I gave those a good stir until everything was mixed together nicely.
When that was all set, I set up a little skewer station to make things easy along the way.
Creating the Bites
To start, I stuck olives on the tooth picks. I ran out of pepperonis first, so this worked pretty well for me. I think I had 3 left over olives on a tooth pick that I just ate right up. I then stuffed a small scoop, about 1 tsp, of the cheese mix into the pepperoni, and then folded the pepperoni and stuck it on the toothpick alongside the olive. To add the finishing touches, I picked a mushroom from the can and added it on the other side of the pepperoni.
Alas! Yummy, healthy, little pizza bites are born! Serve them up on a plate and enjoy the flavors of pizza without all the calories, points, and carbs!
