Salsa Verde Chicken

Your favorite Salsa Verde cooked in a slow cooker with red onion and chicken breasts then shredded and turned into a flavorful bowl!

Prepping the Chicken

To start things off I sprayed my slow cooker with non-stick spray and chopped up a medium red onion into pieces about an inch long. I then poured in the jar of salsa and added the chopped onion.

Next, I added the chicken breasts over the top of the salsa and pushed them in slightly. I then covered the slow cooker and cooked on low for 8 hours. I then took a fork and shredded the chicken into the salsa and mixed until everything was combined. Taste chicken and add salt if needed- this will depend on the salsa you use


Turning Chicken into Bowls

For my meals I used this chicken to make a nice bowl! I used cauliflower rice as my base and then topped the cauliflower with the chicken, half an avocado, a bunch of cilantro, and a squirt of lime juice



This chicken is perfect for meal prep and I made these bowls for the entire week for lunches! I put the cauliflower rice chicken and cilantro into my meal prep containers and then before leaving for work I cute up half an avocado and added in the lime juice over the avocado.
