Skillet Turkey Sweet Potato Hash

Starting Things Off

To get things going I washed and peeled 3 medium sweet potatoes, and then cut them into bite sized chunks about 1 inch long. I then chipped up the onion into large pieces. We like onion in our family so you can totally make them smaller if you are trying to hide them from the kids. I did the same with the red pepper.

Then in a large skillet, I tossed in the ground turkey and cooked for about 5 minutes over medium heat.

After five minutes I added in the garlic, salt, and pepper and cooked until the onions became translucent and soft.

Next I added in the sweet potato along with the red chili flakes gave things a good stir and then covered the skillet and cooked the hash over medium heat until the sweet potatoes were the desired softness stirring the goods up from time to time. This took 15-20 minutes for mine but will vary based on the size of your pieces.


Topping Things Off

Once the potatoes were cooked through I dumped the bag of fat free mozzarella over top and then covered again until the cheese was nice and melty. Then it was time to eat and we took down the entire pan as a family of 4.


Serve it up in some bowls and Enjoy this hearty dish!
