Spinach Artichoke Chicken

Delicious chicken breasts cooked in a dish with pesto, spinach, artichoke hearts, and chopped up roma tomatoes. Top all that off with some Fat Free mozzarella and you have an entire meal!

Getting Things Started

To start things off I sprayed my baking dish with nonsitck spray and plopped the chicken breasts in the bottom. I then topped each breast, we had 3 giant ones, With a dash of salt and pepper followed by a Tablespoon of pesto.

I then chopped up my roma tomatoes and added a handful to the dish. I added in some of the spinach on top of the tomato. After I drained the artichoke hearts, I also roughly chopped those and added then in. I did a few layer of each to get things more evenly distributed.

Now that the dish was full, I topped it off with a bag of Fat Free Mozzarella and popped it in the oven.

I tossed this bad boy in the oven and let it cook for about an hour. If you have thicker or thinner breast adjust the time accordingly until your chicken is cooked through.

Once everything is nicely cooked through, Serve up and enjoy! We had this as a meal in itself. There was no need for sides!
