Prepping Things Up

To get started, I cut up the onion and broccoli into small pieces and set them aside.

In a small sauce pan, I mixed the soy sauce, red wine vinegar, brown sugar, garlic, ginger, and 1/4 cup of water and stirred them together until everything was combined

Get Cooking

Next, I sprayed a large skillet with nonstick spray and added in the onion and cooked it down until it was soft. I then added in the ground turkey and remaining garlic and cooked for 5 minutes.

I then added in the chopped broccoli and shredded carrots, covered the skillet, and cooked everything together until the turkey was cooked all the way through and the carrots had softened.

While the turkey and veggies were cooking, I heat the sauce over medium heat and whisked it to keep the sugar from sticking to the bottom. I mixed 1/4 cup water with 2 Tbsp of corn starch and slowly added it into the sauce. I continued stirring until the sauce began to thicken. I then set the sauce to the side to be used later.

Bringing it Together

I then poured the sauce over the turkey and veggies and stirred until the everything was evenly coated. I then microwaved the cauliflower rice for 6 minutes, and continued cooking the turkey, veggies, and sauce to allow everything to combine.

I Divided the Teriyaki Turkey into 4 portions and served over a bowl of cauliflower rice, topped with green onions!
