Thai Peanut Chicken Wraps

Pan cooked chicken cut up and mixed with veggies and tossed in a Thai peanut sauce. This meal is great on lettuce wraps or just straight from the bowl like a salad.

Getting Started

I started by heating up a pan and cooking two chicken breasts seasoned with salt and pepper. If you start with this, the chicken cooks while you are preparing the rest of the salad and everything is ready in about 30 minutes! i cooked the chicken 10 minutes on each side until they were cooked through.








Mixing up the Slaw

I used the prepackaged coleslaw mix as a base and added in some left over broccoli slaw we had from dinner the other night. I then chopped up some bell peppers into small pieces and added them to the slaw. I used a steam bag and cooked the edamame in the microwave. Once cooked, I added the bag to the slaw mix. Next, I added in a cup of shredded carrots and 3 chopped up green onions. I added in the honey roasted peanuts and then gave everything a good mix together.




Making Thai Peanut Sauce

I mixed the soy sauce, rice vinegar, honey, garlic, and lime juice together and mixed it well


I added in the powdered peanut butter and whisked it in until it was dissolved into the rest of the sauce.










Bringing it all Together

Once the chicken was cooked through I cut it into bite sized pieces and added it into the rest of the slaw mix. I then dumped the peanut sauce over the mix and stirred until everything was evenly coated.


I pulled the top leaves off the lettuce head and scooped the mix into the lettuce wrap. Serve and enjoy!
