Zucchini Boat Tuna Melts

Tuna salad baked in hollowed out zucchini boats and covered in Parmesan cheese for a flavorful and healthy tuna melt!

Mixing the Tuna

I drained the cans of tuna and added them to a small mixing bowl. I then added in the fat free mayo, dijon, celery, onion, dill, salt and pepper and stirred it all together until it was evenly combined.









Making the Zucchini Boats

I washed and cut the ends off of the zucchini. i then took a serving spoon and scraped the seeds out from the middle of each zucchini half. I then added the zucchini guts into the tuna mix and stirred to mix them in









Filling the Boats

I placed the zucchini with the hollow side up in a baking dish. I then sprayed the zucchini with non-stick spray and seasoned them with salt and pepper. Next, I spooned the tuna mix evenly into the boats, leaving a heaping dome of tuna on each boat. I then topped each boat with the shredded Parmesan cheese.







Getting Melty

I then placed the baking dish into the oven and baked them for 20 minutes, until the cheese was melted, the zucchini was cooked but still had some crunch, and the tuna mix was heated through


I took the boats out of the oven and served everyone with two boats each!
