S'Mores Cupcakes

Chocolate cupcakes stuffed with a marshmallow and topped with cool whip and crushed graham crackers makes these cupcakes the perfect s'mores treat!

Making the Batter

So the trick to these healthier cupcakes is all in the batter. You skip the directions on box of cake mix and ditch the oil, eggs, and water. Instead I used a single can of Diet Coke! I poured the box mix in a medium mixing bowl then dumped in the can of soda. Using a spatula, I mixed the devils food cake mix and coke until t was all combined and free of clumps.

I then spooned the batter into cupcake wrappers filling each one about half full. I made 24 cupcakes with this recipe. If you make less you will have to adjust the point value. The point value may also change slightly depending on the brand and type of chocolate cake mix you use!I tossed the cupcakes in the oven and baked according to the low end number on it the package instructions.



Making Room for Mallows

Once the cupcakes were done cooking I let them sit out on the counter, but still in their pans, for about 20 minutes. Leaving the oven on, I took a teaspoon and made a hole in each cupcake just wide enough to squish a marshmallow in.















Stuffing the Cupcakes

I then put a mallow into each cupcake and pushed down gently to make sure they were nice and secure in their new homes.


I placed the cupcakes now stuffed with marshmallows back in the oven for 3 minutes. You want to take them out shortly after then start to get puffy. This will make sure the mallow melts enough to be a soft filling but if you leave them in too long they will melt completely and you will be left with a half empty hole in your cupcake.









Now that the cupcakes have their marshmallow center baked in, I removed the cupcakes from the pan and set them on the counter to cool completely.


















Frosting the Cupcakes

Once cool, I took some cool whip and spread it on each cupcake covering any marshmallow that was still remaining on top.

Then I took 1 full graham cracker (2 square) and crushed them up in a plastic baggie to my desired crushness. I sprinkled the crumbs over each cupcake to complete the s'more!


Store these in the fridge until ready to serve - to keep the cool whip from melting. Serve them up and enjoy the tasty marshmallow surprise with every bite!
