Freezer Breakfast Sandwiches

Your favorite breakfast sandwich made in a big batch and then frozen so you can have a hot, delicious, and healthy breakfast ready in minutes

Making the Eggs

I used my metal cake pan, sprayed with non-stick spray and cracked 12 large eggs into it. I then did a gentile scramble of the eggs and tried to spread the yolks out evenly. I baked them at 375 for 15 minutes. Once the eggs had somewhat cooled, I cut them into 12 square pieces to be placed on the sandwich









Assembling the Sandwich

I took my English muffins and placed the bottom halves on a baking sheet. I then added my meat of choice to the muffin. I used both deli ham and turkey breakfast sausage patties, but bacon would work well too- just precook the bacon before adding it to the sandwich. I then took one of the egg pieces and placed it on the sandwich with a slice of American cheese- if you don't want very melty cheese, skip adding it now and add it to you sandwich after it has been rewarmed- I then topped the sandwich with the top half of the English muffin. Let the Sandwiches cool to room temp before wrapping each individually in plastic wrap and then placing them in a freezer bag. I fit 8 sandwiches into a gallon size freezer bag and then froze them until ready to enjoy in the morning! They will last up to 3 months in the freezer


Heating the Sandwiches for Breakfast

When I was ready to eat my breakfast, I took a sandwich out of the freezer and unwrapped it from its plastic wrap. I then wrapped it in a paper towel and defrosted it in the microwave for 1 min and 10 seconds. I then flipped the sandwich over and cooked on full for 1 minute and 10 seconds- times will vary by microwave. If you left the cheese off during assembly, place the cheese onto the sandwich right after it comes out of the microwave to allow it to warm up. Enjoy your hot breakfast in minutes!!
