Freezer Protein Waffles

4in Waffles made with high protein pancake, waffle, of muffin mix and then frozen so you have healthy, filling, and delicious waffles ready with just a few minutes in the toaster!

WW My Way Smart Points: 4 Green, 4 Blue, 4 Purple

Making Batter

To make my batter for these waffles, I take 1 cup of high protein pancake/waffle mix. You can use any flavor and even the ones that are for muffins! I have made Double Chocolate Chip, Blueberry, Banana Nut, Almond Poppy Seed, Pumpkin Flax, Original Waffles, Cinnamon Oat, and Strawberry Chocolate Chip waffles! Whatever flavor you like you can use! From what I've been able to tell the points are the same no matter the flavor- as long as its high protein mix! I then mix the box mix with some almond milk and a tablespoon of unsweetened applesauce and give it a good stir until there's no more lumps.

Waffle Making

I got this mini waffle maker off amazon for pretty cheap, and i might be investing in one that makes 4 at a time to speed up the process since i love these so much! I spoon 2 heaping tablespoons onto the sprayed waffle iron and let it cook for 3 minutes. I under-cook them slightly since they will be cooked in the toaster again when its time to eat!

Cooling Down

I place my cooked waffle onto a cooling rack and repeat 5 more times. Each batch makes 6 waffles. I let the waffles cool down completely before placing them into freezer bags and into the freezer.

Ready for Breakfast!

When you are ready to have breakfast, pull your waffles out of the freezer and pop them in to toaster until they are cooked to your desired waffle doneness! I cook mine on the freezer setting for 5-6 minutes and that gives me a crispy but still soft inside waffle!
